Celebration Carrot Cake 

Cake:

300gm x organic coconut flour

600gm  x finely grated organic carrot

100gm  x organic unsalted butter , melted

120gm  x coconut oil, melted (or same of butter)

50-120gm x honey – to taste

1 tsp x mixed spice

1 tsp x baking powder

 6 – 8  x organic free range eggs

 pinch salt

(optional)

120gm x raisins

120gm x chopped walnuts

Method:

  • Pre-heat oven to 180c
  • Grease and line 25cm cake tin
  • Mix all dry ingredients 
  • Whisk in eggs one at a time until mixture is reaches slightly runny batter texture
  • Slowly add melted butter (and coconut oil)
  • Add carrot and honey
  • Mix well
  • Pour into cake tin
  • Bake for 30-40 mins or until skewer comes out clean
  • Cool

Icing:

225gm x cream cheese

50gm x orgainc unsalted butter

50gm x honey

Juice of 1 lemon 

1 tsp mixed spice 

Method:

Mix all ingredients with hand held whisk until smooth

Glaze cake once cooled
