Paleo fruit cake

250 gm dried fruit of choice
425 gm tin pineapple chunks in natural juice
80 gm coconut flour
5 eggs (room temp)
1tsp baking powder
Vanilla to taste
Sweetener if required such as honey to taste *

Method:

Preheat oven 180 c

Grease and line base of an 8” spring form cake tin

Place all the ingredients in a large mixing bowl, mix until it is lump free.

Pour into cake tin, bake until there is colour on top and it is springy to the touch. Mine took 30 minutes!

* I did not add sweetener and it was perfect but we don’t really do sweet any more!
